French-born Louis (AKA Gooey Louis) is a professional affineur, tasked with ageing cheese to perfect ripeness. He's done it for some of the poshest restaurants and shops in the world and now he works for you.

London lad Alex is the cheese world's apex predator. He's hunted fine curds for the UK's top suppliers and has a contact book the size of Brussels. Want some elite-level customer service? He's your man.
Petra (wine expert)
Multi-lingual and multi-talented, Petra has bought wine for the best in the biz and is a cheese pairing expert, too. She looks after everything grape-related.
